“Life happens, pizza helps!

Here’s a simple and fun recipe to enjoy with your grandkids: Homemade Mini Pizzas! This recipe is great because it lets kids make their own pizzas with whatever toppings they like best. And the best part? You don’t even need an oven! 😉

Ingredients

For the Pizza Dough:

  • 2 cups of all-purpose flour
  • 1 tablespoon of active dry yeast
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of sugar
  • 3/4 cup of warm water (110°F)
  • 1 tablespoon of olive oil

For the Toppings:

  • 1 cup of pizza sauce (Maybe use Grandma’s secret recipe?)
  • 2 cups of shredded mozzarella cheese
  • Your favorite toppings like pepperoni, sausage, mushrooms, onions, bell peppers, or olives.

Let your grandkids pick their own toppings. They can even try something different like little pieces of hotdog. Just remind them to choose toppings they like to eat!

1. Prepare the yeast mixture

In a small bowl, combine 110 ml of warm water with 1 teaspoon of sugar and 1 teaspoon of yeast. Stir the mixture gently and let it sit for about 5 minutes, or until it becomes frothy. This indicates that the yeast is active and ready to use.

2. Make the dough

In a larger mixing bowl, add 1 cup of flour and ¼ teaspoon of salt. Pour in the activated yeast mixture and 1 tablespoon of oil. Mix well until the dough begins to form. Knead the dough on a lightly floured surface until it’s smooth and elastic.

Lightly oil the bowl and place the dough back in. Cover with a damp cloth and let it rise in a warm place for about 40 minutes, or until it doubles in size.

3. Shape the mini pizzas

Once the dough has risen, take it out and divide it into small portions. On a floured surface, roll out each portion into a thin layer. Use a round cookie cutter or the rim of a small bowl to cut the dough into round shapes. Prick each round with a fork to prevent the dough from puffing up too much while cooking.

4. Add toppings

Spread a thin layer of pizza sauce over each dough round. Sprinkle shredded mozzarella cheese on top. Add slices of capsicum, tomato, and black olives. Sprinkle mixed herbs over the toppings for added flavor.

5. Cook the mini pizzas

Grease a frying pan lightly with oil and heat it over low flame. Place the prepared mini pizzas in the pan. Cover with a lid to ensure the cheese melts and the dough cooks evenly. Cook for about 10 minutes, or until the dough is golden and the cheese is bubbly.

6. Enjoy together with your grandkids!

Once cooked, remove the mini pizzas from the pan and serve them hot. This mini pizza recipe allows for lots of creativity.

Feel free to experiment with different toppings and cheese varieties to make each mini pizza unique. Enjoy crafting your own delicious mini pizzas at home!

And there you have it! A fun pizza party that’s easy on the wallet. The grandkids can have a blast making their own pizzas by smashing the dough and choosing their favorite toppings (as long as they’re sensible choices!). Grandma, if you thought you were loved before, just wait until you suggest this on a Friday night! 🙂
