Making sushi at home might sound tricky, but it’s actually a fun and easy way to spend time with your grandkids—especially with this simple recipe!

Ingredients
- 1 1/2 cups sushi rice (see note)
- 2 tbsp rice wine vinegar
- 1 tbsp caster sugar
- 4 nori sheets
- 2 tbsp whole-egg mayonnaise
- 1 Lebanese cucumber, cut into matchsticks
- 1 medium avocado, thinly sliced
- 1 medium carrot, grated
- Salt-reduced soy sauce, to serve
Step 1
Rinse the rice with water 3 times, or until the water looks clear. Drain the rice using a strainer and place it over a bowl. Let it sit and drain for 10 minutes.
Step 2
Put the rice and 1 1/2 cups of cold water into a saucepan. Cover it and place it on medium heat. When the water starts to boil, turn the heat down to low.
Let it simmer (still covered) for 12 minutes, or until the water is gone. Take it off the heat and let it sit, still covered, for 10 more minutes.
Step 3
While the rice is resting, mix vinegar and sugar in a microwave-safe cup. Microwave it on high for 30 seconds. Stir until the sugar is fully dissolved. Move the cooked rice into a large bowl. Use a spatula to gently stir and break up any lumps. Slowly pour in the vinegar mix. Keep stirring and turning the rice until it cools down.
Step 4
Place one sheet of nori (shiny side down) on a sushi mat. Wet your fingers and gently spread 3/4 cup of rice over the nori. Leave a 2 cm gap at one short end. Spread 2 teaspoons of mayonnaise down the center of the rice.
Lay cucumber, avocado, and carrot on top of the mayo. Use the sushi mat to roll everything up tightly. Cut the roll into 6 pieces. Repeat with the rest of the ingredients to make 24 sushi pieces. Serve with soy sauce.
